Ingredients:

High protein tortillas (we use the Mission brand)

Chicken breast (8 oz)

Red onion, finely sliced

BBQ sauce
-
Basil
-
Fat free mozzarella cheese

Cherry tomatoes

Olive oil
-
Garlic Powder
-
Onion Powder
-
Salt and pepper
-
Paprika
-
Grated or shredded parmesan
-
Pine nuts (or substitute sesame seeds)

Cooking Instructions:

First, you can either buy premade pesto or follow below for a homemade pesto.

Add 1 package of fresh basil, 1 tbsp olive oil, a pinch of salt, pepper, 1 tbsp sesame seeds (or pine nuts) and 1 tbsp of parmesan to a blender or mortar and pestle until well mixed. Set aside until later.

Add avocado or olive oil to a pan and set to medium heat. Season the chicken breast with garlic powder, onion powder, salt, pepper and paprika on both sides and rub into the chicken. Cook the chicken breast for 4-6 minutes on each side and set aside to rest.

Preheat the oven to 400 degrees.

Add 1⁄2 tbsp olive oil to the tortilla and add garlic powder and onion powder. Thinly slice and add chicken and ¼ cup of fat free mozzarella cheese per pizza.

Add whichever toppings you choose and bake for 8-10 minutes or until the edges become crispy. Below are some of the toppings we enjoy!

BBQ Chicken: Replace the olive oil with BBQ sauce and add red onion, chicken and cheese.

Pesto Chicken: Replace the olive oil with homemade or store bought pesto and top with chicken and cheese.

Margherita: Add the olive oil, chicken, thinly sliced cherry tomatoes and cheese. Top with fresh basil.
